Tomato season is coming up and as expected, their prices are starting to get quite low. Last weekend I got almost a kilo of grape tomatoes for only $2! And when I have plenty of this and got tired of eating them as they are, I roast them in the oven.

These oven roasted grape tomatoes are easy to prepare. Just combine olive oil, salt, freshly-cracked pepper, and your herb(s) of choice then roast them in the oven at 400F. I used basil for this recipe but you can use any herb you have in hand like rosemary, oregano, thyme, or parsley. The better part is you don’t really need to be exact with the measurements. – just go with what you feel like is enough and will taste good.

These oven roasted grape tomatoes are wonderfully versatile. Serve them as a condiment, a side vegetable dish, toss them in pasta, top on a crostini, or even make a salsa with them.

Description

These oven roasted grape tomatoes are wonderfully versatile. Serve them as a condiment, a side vegetable dish, toss them in pasta, or make a salsa with them.


Ingredients

  • 500 grams grape tomatoes
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked pepper
  • 1 teaspoon dried basil

Instructions

  1. In a shallow roasting pan, toss together tomatoes, oil, dried basil, salt, and freshly cracked pepper.
  2. Roast in 400F (200C) oven, stirring once or twice, for about 25 minutes.
