Makes: 3-4 servings
This Turkish shepherd’s salad requires just a few simple ingredients to produce a light and refreshing salad that is perfect as a starter, a dip, or a side dish. Toss all the ingredients together near serving time and prepare the amount enough for one meal as this salad is not the type that improves after refrigeration.

Turkish Shepherd's Salad

This Turkish Shepherd’s salad is bursting with Mediterranean flavors: Roma tomatoes, cucumbers, onions, onions, lemon, garlic, olive oil, and feta cheese (optional). This salad is similar to the Greek salad that we commonly know. Serve it with pitas or with grilled meats. It is best to make this salad right before serving time or prepare the ingredients ahead then just toss them together just before serving time. Shepherd’s salad does not sit well in the fridge – the cucumber becomes watery and the tomatoes lose its crunch and texture, so try to make only the amount you can consume in one meal.

Combine the chopped tomatoes, cucumber, bell peppers, and onions in a bowl.

Step 2 of 3: How to make Turkish Shepherd's Salad

Make the dressing by whisking together olive oil, juice of one lemon, minced garlic, salt, and pepper.

Toss the dressing into the chopped vegetables and mix well. Taste and adjust seasonings. Serve immediately.

Optional: add crumbled feta, if you wish!

All you need is 10 minutes to make this simple yet bursting with Mediterranean flavors Shepherd’s Salad. Great to be paired with pitas or grilled meats! 


Ingredients

  • 1 piece small cucumber, seeded and diced into 1/4 inch
  • 2 pieces roma tomatoes, seeded and diced into 1/4 inch
  • 1 piece small red onion, diced into 1/4 inch
  • 1 piece small green bell peppers, seeded and diced into 1/4 inch
  • crumbled feta (optional)

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 1 –2 cloves garlic, minced
  • juice of 1 lemon
  • salt and pepper to taste

Instructions

  1. Combine the chopped tomatoes, cucumber, bell peppers, and onions in a bowl.
  2. Make the dressing by whisking together olive oil, juice of one lemon, minced garlic, salt, and pepper.
  3. Toss the dressing into the chopped vegetables and mix well. Taste and adjust seasonings. 

Notes

(Note 1) It is best to make this salad right before serving time or prepare the ingredients ahead then just toss them together just before serving time.
(Note 2) Make enough for one meal as this salad does not sit well in the fridge – no leftovers as much as possible. =)
